On occasion, Wines Under the Radar will feature a wine ‘From the Cellar’. This will be a wine that has been resting in my wine cellar or that of a friends. My experience has always led me to the conclusion that almost all wines can do with a little time in the bottle to evolve before they are ready for primetime. Some take more time than others……….
The Edmond Cornu Aloxe-Corton 1er Cru ‘Valoziéres 2005 is medium dark purplish in color. Lavender, violet and deep dark fruit aromatics continue to open as the wine sits in the glass . On the palate the wine is full bodied . Certainly, bigger style red Burgundy with notes of dark fruit, forest floor components (cedar) with solid, dusty tannins that coat the mouth. Well balanced. Additional cellaring required.
